Ingredients

  • 1 box Dreamfields Penne Rigate
  • 1 medium sweet onion diced
  • 2 tablespoons unsalted butter
  • 1 pound shrimp medium-sized, peeled and deveined
  • 1/4-1/2 teaspoon chili powder
  • 3 ripe tomatoes diced
  • 1/3 cup cilantro chopped
  • 2 tablespoons lime juice (about 1 lime)
  • salt

Directions

  1. Prepare pasta according to package directions; set aside.
  2. Meanwhile, sauté onion in butter over medium heat until translucent and aromatic, about 5 minutes, stirring frequently. Add shrimp; season with chili powder. Cook and stir about 2 to 3 minutes or until shrimp are opaque. Add tomatoes to shrimp mixture; cook and stir 2 minutes. Remove from heat.
  3. Add pasta, cilantro, lime juice, and salt, as desired to shrimp mixture. Toss to combine.
