Rotini
Ingredients
- 8 oz Dreamfields® Rotini
- 1 (6 oz) jar sun-dried tomatoes, packed in oil, about 2/3 cup
- 1/4 cup sliced Kalamata olives
- 1/4 cup toasted walnuts pieces
- 2 teaspoons Italian seasoning
- 1 teaspoon jarred minced garlic
- Pinch crushed red pepper
- 2 tablespoons extra-virgin olive oil
- 1 (15 oz) can white beans, rinsed and drained
Directions
- Cook pasta according to package directions, reserving 1/2 cup of pasta water.
- In food processor or blender, combine sun-dried tomatoes (tomatoes and oil), olives walnuts, Italian seasoning, and crushed red pepper; pulse until uniformly chopped. Add olive oil and process, scraping down sides as needed, until it forms a pesto-like consistency.
- Toss cooked pasta with sun-dried tomato mixture, adding reserved pasta water one tablespoon at a time as needed to thin the pesto. Add white beans; gently toss to combine.
