Rotini
Ingredients
- 1 box Dreamfields® Rotini or Dreamfields® Penne Rigate
- 4 oz pepperoni, sliced into strips
- 1 jar (7.5 oz) marinated artichoke hearts, chopped
- 1 can (2.25 oz) sliced black olives, drained
- 2 tablespoons grated Parmesan
Herbed Vinaigrette Recipe
- 1/2 cup white wine or rice vinegar
- 1/3 cup olive oil
- 2 teaspoons Dijon mustard
- 1 1/2 teaspoons dry Italian seasoning
- 1/2 teaspoon jarred minced garlic
Directions
- Cook pasta according to package directions. Rinse with cool water and drain. While pasta is cooking, prepare the vinaigrette by whisking all ingredients together until well combined.
- Toss drained pasta with pepperoni, artichokes, black olives, and half of the vinaigrette. Cover and chill for up to 8 hours. Just before serving, toss again, adding additional dressing as desired. Top with grated Parmesan.
- If desired, you can substitute 2/3 cup of your favorite shelf-stable bottled Italian dressing for the Herbed Vinaigrette.
