Penne Rigate
Ingredients
- 1 box Dreamfields Penne Rigate cooked al dente
- 2 cups lobster meat cooked
- 1 cup celery diced
- 1 cup green onions sliced
- fresh dill (optional)
Dressing
- 1/2 cup light mayonnaise
- 1 tablespoon brown spicy mustard
- 1 tablespoon fresh dill chopped
- salt and pepper to taste
Directions
- Cook pasta according to package directions. Rinse pasta in cold water; drain again. Place in large bowl. Add lobster, celery and green onions to pasta. Set aside.
- In a small bowl, combine all dressing ingredients. Gently fold dressing into lobster/pasta mixture.
- Chill at least 1 hour. Garnish with fresh dill, if desired and serve.
