Penne Rigate
Ingredients
- 1 box Dreamfields Penne Rigate
- 2 tablespoons olive oil
- 2 cups fresh mini portobello mushrooms thinly sliced
- 2 cloves garlic grated
- 1 5 oz package fresh baby spinach
- 1 tablespoon fresh basil chopped
- 1/4 teaspoon black pepper
- 1-1/2 tablespoons fresh lemon juice
- 1/2 cup Parmesan cheese freshly grated
- crushed red pepper flakes
Directions
- Cook pasta according to package directions.
- Meanwhile, heat oil in large skillet over medium heat until hot. Add mushrooms and garlic; cook 5 minutes or until mushrooms are almost tender, stirring frequently. Stir in spinach, basil and black pepper; cook 3 to 5 minutes or until spinach is wilted. Stir in lemon juice. Remove from heat.
- Add pasta to skillet; toss gently to combine. Add Parmesan; toss. Season with pepper flakes, as desired.
