Rotini
Ingredients
- 3 cups Dreamfields Rotini
- 1 tablespoon olive oil
- 1/2 red bell pepper chopped
- 1/2 green bell pepper chopped
- 1/2 small onion chopped
- 2 cloves garlic chopped
- 1 10 oz can chicken breast
- 1 10.5 oz can 98% fat-free cream of chicken soup
- 1 cup skim milk
- 2 teaspoons Cajun spice blend
Directions
- Prepare pasta according to package directions; drain. Rinse with cold water; drain again.
- Sauté peppers in olive oil for about 3 minutes. Add onion; sauté 2 to 3 minutes until onions are caramelized. Add garlic; sauté for another minute. Remove from heat. Add chicken.
- In separate bowl, stir together soup, milk and Cajun spice. Add to pepper mixture and return to burner over medium heat, heat through. Remove heat. Toss with pasta and serve.
