Elbows
Ingredients
- 2 cups Dreamfields Elbows
- 2 cups baby spinach leaves rinsed and drained
- 1 cup strawberries sliced
- 1/4 cup pecans coarsely chopped, toasted if desired
DRESSING:
- 1/4 cup lemon juice
- 1/4 cup light mayonnaise
- 3 tablespoons white vinegar
- 2 tablespoons extra virgin olive oil
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 tablespoon poppy seeds (heaping tablespoon)
Directions
- In medium bowl, whisk together salad dressing ingredients until blended. Cover; chill at least 1 hour before serving.
- Cook pasta according directions. Place pasta in large bowl.
- Add spinach, strawberries and pecans to bowl with pasta. Add chilled dressing; toss gently to combine.
