Spaghetti
Ingredients
- 1 box Dreamfields Spaghetti
- 2 tablespoons extra virgin olive oil
- 1/2 small onion minced
- 6 ounces button mushrooms sliced
- 2 sprigs fresh thyme
- 5 ounces baby spinach fresh
- 1/4 cup heavy whipping cream
- Parmigiano Reggiano cheese grated (optional)
- kosher salt and black pepper
Directions
- Cook pasta according to package directions. Reserve 1/2 cup cooking liquid before draining; set aside.
- Meanwhile, heat oil in large skillet over medium until hot. Add onion; cook 5 minutes or until soft, stirring occasionally. Add mushrooms and thyme; cook and stir 5 minutes or until soft, stirring occasionally. Season with salt and pepper, as desired. Add spinach and cream; stir to combine. Remove from heat.
- Add pasta to skillet; toss to combine. If mixture is too thick, add reserved cooking liquid to reach desired consistency. Check for seasoning. Add cheese, and additional salt and pepper, as desired.
