Spaghetti
Ingredients
- 1 box Dreamfields Spaghetti
- 4 tablespoons olive oil (use high quality), divided
- 1 bunch broccolini
- 6 cloves garlic sliced thinly
- 1/4 teaspoon crushed red pepper flakes
- pine nuts (optional)
Not vegan? You may prefer it with the following:
- Parmesan cheese grated (optional)
Directions
- Prepare pasta according to package directions adding broccolini during last 2 minutes of cooking. Reserve 1 cup cooking liquid before draining.
- Heat 3 tablespoons of the oil in large skillet or Dutch oven over medium-low heat. Add garlic and red pepper flakes. Cook 2 minutes, stirring occasionally. Lower heat if garlic browns too quickly. Add pasta water and remaining 1 tablespoon of olive oil; whisk vigorously to emulsify.
- Remove skillet from heat. Add pasta and broccolini. Toss vigorously to continue emulsification and coat pasta completely.
- Top with pine nuts and cheese, if desired.
