Ingredients

  • 1 box Dreamfields Spaghetti
  • 4 tablespoons olive oil (use high quality), divided
  • 1 bunch broccolini
  • 6 cloves garlic sliced thinly
  • 1/4 teaspoon crushed red pepper flakes
  • pine nuts (optional)
Not vegan? You may prefer it with the following:
  • Parmesan cheese grated (optional)

Directions

  1. Prepare pasta according to package directions adding broccolini during last 2 minutes of cooking. Reserve 1 cup cooking liquid before draining.
  2. Heat 3 tablespoons of the oil in large skillet or Dutch oven over medium-low heat. Add garlic and red pepper flakes. Cook 2 minutes, stirring occasionally. Lower heat if garlic browns too quickly. Add pasta water and remaining 1 tablespoon of olive oil; whisk vigorously to emulsify.
  3. Remove skillet from heat. Add pasta and broccolini. Toss vigorously to continue emulsification and coat pasta completely.
  4. Top with pine nuts and cheese, if desired.
