Ingredients
- 8 ounces Dreamfields Rotini
- 1-1/2 cups tofu cubed
- 1 cup sugar snap peas trimmed and sliced lengthwise
- 1/2 cup red bell pepper minced
- 1/3 cup cilantro chopped
- 2 tablespoons fresh mint chopped
PICKLED BEETS:
- 2 beets trimmed, thinly sliced
- 1/2 small onion thinly sliced
- 1-1/2 cups rice vinegar
THAI SAUCE:
- 1/2 cup peanut butter
- 2 tablespoons rice vinegar (or use beet pickling liquid)
- 2 tablespoons reduced-sodium soy sauce
- 2 tablespoons honey
- 1-1/2 tablespoons sesame oil
Directions
- For Pickled Beets, combine beets, onion and rice vinegar in a jar or other container with lid. Cover and refrigerate overnight.
- Cook pasta according to package directions. Rinse pasta in cold water; drain again. Place pasta in large bowl; set aside.
- Meanwhile, in medium bowl, whisk together Thai Sauce ingredients. Add half of sauce to pasta; toss to combine.
- Drain beets (reserve liquid for sauce or discard). Add beets, onion, tofu, peas, bell pepper, cilantro and mint to pasta. Toss to combine. Add additional Thai Sauce, if desired.
- Refrigerate, covered, about 2 hours or until chilled.
