Penne Rigate

Ingredients

  • 8 oz Dreamfields® Penne Rigate (2 cups)
  • 1 tablespoon olive oil
  • 1 teaspoon jarred minced garlic
  • 1/2 teaspoon dry Italian seasoning or dry thyme
  • 1 (4.5 oz) jar sliced mushrooms in water, drained
  • 1 cup reduced-sodium chicken broth
  • 1/4 cup canned evaporated milk*
  • 2 tablespoons flour
  • 1/4 cup sun-dried tomatoes, sliced
  • 2 (12.5 oz) cans white chunk chicken breast in water, drained
  • 2 tablespoons grated Parmesan

Directions

  1. Cook pasta according to package directions; set aside.
  2. In large non-stick skillet, heat olive oil over medium heat. Add garlic and dry herbs; sauté stirring frequently until garlic is translucent and fragrant. Add mushrooms and sauté addition 2 minutes. Add chicken broth and bring to a simmer.
  3. In small bowl combine evaporated milk and flour, stir until smooth. Gradually add milk mixture to skillet. Reduce heat to low and continue to cook until mixture is slightly thickened, stirring frequently. Stir in dried tomatoes, chicken, and cooked penne until pasta is coated and chicken is heated through. Top with grated Parmesan.

*Can substitute low-fat milk or your favorite plant-based milk.
