Ingredients
- 4 oz Dreamfields® Rotini
- 2 teaspoons olive oil
- 1/2 teaspoon jarred minced garlic
- 1/4 teaspoon dry sage
- 1/4 teaspoon dry thyme
- 1/2 cup canned pumpkin purée (not pumpkin pie filling)
- 1/4 cup grated Parmesan cheese
- 2 tablespoons canned evaporated milk
- salt and pepper to taste
- 2 tablespoons crumbled bacon (approximately 2 slices microwaveable fully cooked bacon) or bacon bits
- 10 hazelnuts toasted, chopped
Directions
- Cook pasta according to package directions. Drain and reserve about 1/4 cup pasta water. Set aside. Keep pasta warm.
- Meanwhile, heat olive oil in a medium-sized skillet. Add garlic, sage, and thyme; cook for one minute until fragrant. Add pumpkin puree and cheese; stir until ingredients are fully combined. Remove from heat.
- Add pasta, milk, and reserved pasta water to pot with pumpkin sauce; toss to coat. Season to taste with salt and pepper.
- Top pasta with chopped hazelnuts and crumbled bacon. Serve warm.
- Regular 2% milk, half and half, or favorite plant-based milk can be substituted for canned evaporated milk
