Rotini
Ingredients
- 1 box Dreamfields Rotini
- ¼ cup crumbled bacon (approximately 4 slices microwaveable fully cooked bacon) or bacon bits
- 1 (14.5 oz) can diced or petite diced tomatoes, drained well
Vinaigrette
- 1-2 tablespoons Dijon mustard
- 1 teaspoon jarred minced garlic
- ½ dried dill
- ½ teaspoon dried parsley
- ½ teaspoon dried chives
- ¼ teaspoon onion powder
- ¼ teaspoon sea salt
- ⅛ teaspoon black pepper
- ¼ cup apple cider vinegar
- ⅓ cup olive oil
Directions
- Cook pasta according to package directions.
- In small bowl, whisk together Dijon, garlic, and dry herbs. Add vinegar. Slowly whisk in olive oil until combined.
- Pour half of vinaigrette over warm pasta. Let cool to room temperature.
- Add crumbled bacon and tomatoes to pasta; toss to combine. Add more vinaigrette if needed.
