Penne Rigate
Ingredients
- 1 box Dreamfields Penne Rigate Pasta
- 6 tablespoons extra virgin olive oil
- 1-1/2 cups panko bread crumbs
- 3 cups Dreamfields Penne Rigate
- 3-4 cups red cabbage shredded
- 1 ripe mango peeled and cut into thin slices
- 3/4 cup fresh cilantro roughly chopped
- 1/2 cup chili spiced peanuts chopped (or any spiced nut)
- 1/4 cup red onion sliced thinly
- 1 red chili pepper finely diced, seeds removed
Dressing
- 6 ounces plain nonfat yogurt
- 2 tablespoons orange juice
- 1 tablespoon lemon juice
- 1 tablespoon brown rice vinegar
- 1 tablespoon olive oil
- salt and black pepper
Directions
- Cook pasta according to package directions. Rinse pasta in cold water; drain again. Place pasta in large bowl; set aside.
- Meanwhile, in small bowl, whisk together dressing ingredients; set aside.
- Add cabbage, mango, cilantro, peanuts, onion and chili pepper to pasta. Add yogurt dressing; toss to coat pasta completely. If salad is not to be served immediately, refrigerate pasta mixture and dressing separately. Add dressing and toss to coat just before serving.
