Penne Rigate
Ingredients
- 1 box Dreamfields Penne Rigate
- 4 cloves garlic minced
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon lemon juice
- 1/2 teaspoon lemon zest
- 1 cup plain Greek yogurt
- 2 tablespoons dill chopped fresh
- 1/2 cup grape or cherry tomatoes halved
- 1/4 cup black olives pitted
- 2 cups cooked chicken diced (optional)
Directions
- Cook pasta according to package directions. Rinse pasta in cold water; drain again. Set aside.
- Meanwhile, in large bowl mix together garlic, lemon juice, lemon zest, pepper and salt. Add Greek yogurt; stir until well combined. Stir in dill. Add pasta to bowl. Toss to combine. Add tomatoes, olives and chicken, if desired; toss to combine well. Serve immediately or refrigerate, covered, to chill.
