Ingredients

  • 1 box Dreamfields Penne Rigate
  • 4 cloves garlic minced
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon lemon juice
  • 1/2 teaspoon lemon zest
  • 1 cup plain Greek yogurt
  • 2 tablespoons dill chopped fresh
  • 1/2 cup grape or cherry tomatoes halved
  • 1/4 cup black olives pitted
  • 2 cups cooked chicken diced (optional)

Directions

  1. Cook pasta according to package directions. Rinse pasta in cold water; drain again. Set aside.
  2. Meanwhile, in large bowl mix together garlic, lemon juice, lemon zest, pepper and salt. Add Greek yogurt; stir until well combined. Stir in dill. Add pasta to bowl. Toss to combine. Add tomatoes, olives and chicken, if desired; toss to combine well. Serve immediately or refrigerate, covered, to chill.
