Penne Rigate
Ingredients
- 1 box Dreamfields Penne Rigate
- 14 yellow cherry tomatoes halved
- 14 red cherry tomatoes halved
- 1 cup raw corn cut from the cob (about 1 large ear of corn)
- 1 cup cucumbers 1/2-inch diced
- 1 handful baby spinach stems removed, cut into strips (about 1/4 cup)
DRESSING:
- 6 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon dried parsley flakes
- 2 teaspoons freshly ground black pepper
- salt
Directions
- Cook pasta according to package directions. Place pasta in large bowl.
- Add cucumbers, tomatoes, corn and spinach to pasta; toss.
- For dressing, whisk together oil, vinegar, parsley, pepper, and salt, as desired. Add to pasta; toss to combine well.
