Ingredients

  • 1 box Dreamfields Penne Rigate
  • 14 yellow cherry tomatoes halved
  • 14 red cherry tomatoes halved
  • 1 cup raw corn cut from the cob (about 1 large ear of corn)
  • 1 cup cucumbers 1/2-inch diced
  • 1 handful baby spinach stems removed, cut into strips (about 1/4 cup)

DRESSING:

  • 6 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon dried parsley flakes
  • 2 teaspoons freshly ground black pepper
  • salt

Directions

  1. Cook pasta according to package directions. Place pasta in large bowl.
  2. Add cucumbers, tomatoes, corn and spinach to pasta; toss.
  3. For dressing, whisk together oil, vinegar, parsley, pepper, and salt, as desired. Add to pasta; toss to combine well.
