Penne Rigate
Ingredients
- 1 box Dreamfields Penne Rigate
- 7 ounces olive tapenade
- 6 ounces feta cheese crumbled
- 1 11 oz jar artichoke hearts packed in water, drained, halved
- 8 ounces grape tomatoes halved
- 4-6 ounces feta cheese salad dressing divided
- salt and pepper (to taste)
- 2 cups baby spinach roughly chopped
Directions
- Cook pasta according to package directions. Place pasta in large bowl.
- Place tapenade, feta, artichoke hearts and tomatoes in small bowl; stir to combine. Add to pasta; toss to combine well.
- Add 4 ounces of salad dressing to pasta mixture; toss to combine. Add salt and pepper, as desired.
- Just before serving, fold in spinach. If needed or desired, add 1 to 2 additional ounces of dressing to salad.
