Spaghetti
Ingredients
- 1 box Dreamfields Spaghetti
- 1 tablespoon olive or grapeseed oil
- 1/2 sweet onion chopped
- 2 cloves garlic minced
- 1 cup low-sodium vegetable stock
- 3-4 large large tomatoes (or 6-7 plum tomatoes) chopped
- 1 handful fresh basil leaves chopped
- salt and pepper optional
Not vegan? You may prefer it with the following:
- 1 cup Parmesan cheese grated or shredded (optional)
Directions
- Cook pasta according to package directions. Drain and keep warm.
- Meanwhile, heat oil in sauté pan over medium heat. Add onion and garlic to pan; stir one minute. Add stock, turn off heat.
- Place pasta in large bowl. Top with onion-garlic mixture, then tomatoes and basil. Optional: Add Parmesan cheese and toss. Season with salt and pepper, if desired.
