Ingredients
- 1 box Dreamfields Rotini
- 2 cups fresh blackberries, divided
- 8 ounces fresh mozzarella cubed
- 1 cucumber chopped
- 1 green pepper chopped
- 2 tablespoons sugar
- 1 teaspoon ginger ground
- 2/3 cup apple cider vinegar
- 2/3 cup extra virgin olive oil
- salt and pepper to taste
Directions
- Prepare pasta according to package instructions. Rinse pasta in cold water; drain again. Place in large bowl; set aside.
- While pasta is cooking, heat half of blackberries in small saucepan with the sugar and ginger. Cook over medium low heat for 10 minutes. Remove from heat; cool.
- Strain the blackberries through a sieve, then combine with the vinegar and oil. Whisk until smooth.
- In a large bowl, combine pasta, blackberry vinaigrette, cucumbers, peppers, cheese and remaining blackberries. Season with salt and pepper, as desired. Serve chilled.
